It’s the symbol of the Mythosaur’s skull, the giant creatures the Mandalorians once rode upon.

Its skull was one of the traditional symbols of Mandalorian iconography, and some Mandalorian armor bore the distinctive symbol. A mythosaur skull hung from one of the walls in Dok-Ondar's Den of Antiquities in Black Spire Outpost, Batuu.
