ß-Carotene (CAS: 7235-40-7)

Carotenes are unsaturated hydrocarbons with the formula C40Hx. They occur naturally in plants but (with few exceptions) not in animals. Carotenes are important for photosynthesis. They absorb uv and blue light and scatter orange / red light. Carotenes are responsible for the orange colour of carrots and many other fruits & vegetables, e.g. sweet potatoes.

ß-Carotene is broken down in humans to form retinal, a form of vitamin A.
