Notes :
The Bean is a tropical species which requires not less than 13°-14° C temperature in order to produce a satisfactory crop. For this reason it is only cultivated in Spring and Summer. Beans are a very nutrient and almost complete food, as it provides vitamins, fibres and proteins. In the ancient times, however, it was not appreciated, because, like all legumes, it was considered impure, as linked to the natural cycle of life and death. For this reason beans were the symbol of power during Saturnalia (today’s Carnival). Until not so long ago, European farmers prohibited their children to play near beans fields, because the Devil could appear.
