how do i get just the textures from this project?

I have zbrush file of the project with polypaint on it. That's not an unwraped map like a typical video game model has. Just google zbrush polypaint to find out more information

is there a way to port something like that into unity or blender with the paint applied?

Yes, but that's require some knowledge. You need to make a decimation to reduce polycount inside zbrush first. Don't forget to keep the polypaint. Then export it as an OBJ file with the polypaint. Inside blender or unity you want to display polypaint. I'll not able to assists you with the process due to lack of time
